This recipe from Nourished by Mads is one of our family’s favorites for winter! Here’s how we make it.
Ingredients:
1 lb of chicken breast/rotisserie chicken
2 tbsp olive oil
1 small yellow onion, chopped
1 full celery rib, chopped
1/3 cup shredded carrots
3 garlic cloves, minced
1/3 cup flour
1/3 cup butter, divided
3 1/2 cups chicken broth/stock
1 1/2 cups heavy cream
1/2 chicken boullion cube
1/2 tsp freshly ground pepper
1/2 tsp salt
1/4 tsp garlic powder
4 cups potato gnocchi (1 package; 16 oz)
1/4 cup of grated parmesan, for topping
Directions:
Chop your cooked chicken breast into very small pieces. Set aside.
Heat a pot or a dutch oven on the stove with olive oil. Once it's heated, add on your onions, garlic, celery, and carrots. Let cook for 4 minutes (or until tender).
Once tender, add on your seasonings (salt, pepper, and garlic powder) then add on your flour. Mix around until it's all coated in flour and seasonings. Then, add on your butter on top.
Add in your chicken broth and bring to a boil. Once boiling, add in your gnocchi and then immediately bring the heat down to a simmer (low heat).
Once the soup is not boiling anymore, add in your spinach, chicken, heavy whipping cream, and chicken bouillon. Cover the pot with a lid and let set for 15 minutes on low heat (do NOT boil - cream does not do well while boiling and it may become grainy if you do so).
Remove from the low heat after 15 minutes and serve in a bowl. Top with freshly grated parmesan or Romano cheese. Enjoy!

Ingredients
1 pound spaghetti
1 tablespoon olive oil
8 slices bacon, diced
1 onion, chopped
1 clove garlic, minced
4 eggs, beaten
⅔ cup grated parmesan cheese
2 tablespoons chopped fresh parsleyDirections
In a large pot of boiling salted water, cook spaghetti pasta until al dente. Drain well. Toss with 1 tablespoon of olive oil, and set aside.
Meanwhile in a large skillet, cook chopped bacon until slightly crisp; remove and drain onto paper towels.
Reserve 2 tablespoons of bacon fat; add remaining 1 tablespoon olive oil, and heat in reused large skillet. Add chopped onion, and cook over medium heat until onion is translucent. Add minced garlic, and cook 1 minute more. Add wine if desired; cook one more minute.
Return cooked bacon to pan; add cooked and drained spaghetti. Toss to coat and heat through, adding more olive oil if it seems dry or is sticking together. Add beaten eggs and cook, tossing constantly with tongs or large fork until eggs are barely set. Quickly add 1/2 cup Parmesan cheese, and toss again. Add salt and pepper to taste (remember that bacon and Parmesan are very salty).
Serve immediately with chopped parsley sprinkled on top, and extra Parmesan cheese at table.

Ingredients:
4 Cups 00 Flour - We use King Arthur’s
4 Eggs, 2 Egg Yolks
Olive Oil
Salt
Steps:
Grab a large mixing bowl and add your flour. Form a well in the middle of the flour and that’s where you’ll place all of your eggs plus a pinch of salt.
Use a fork and start to whisk the eggs together, slowing circling the well to incorporate the flour.
Once you get about half the flour mixed in, start mixing with your hands. We want to get as much flour incorporated as we can. I typically use a tablespoon of water in the mixing process to help this.
When you feel you have as much flour incorporated as you can, we’re going to transfer it to a flat service and knead the dough by hand for 4-5 minutes.
After kneading, form a ball and spray the outside of the dough ball with a little olive oil before you wrap it in plastic wrap.
Let the dough sit for 30 minutes - 4 hours and then you’re ready to form your pasta.
I typically use a pasta roller or my KitchenAid pasta plate attachments to form my noodles. However, you don’t need any fancy equipment. While a pasta roller does make it easier to get your dough thin enough, You can use a rolling pin and knife for some easy pappardelle.
After your dough is ready, you can let it dry to use later or cook it directly afterwards while it’s fresh! We typically boil the pasta for 3-5 minutes until it’s cooked al dente, then finish it in our favorite sauce.
-
Ingredients:
Pasta of your choice
¼ cup olive oil
Minced garlic
½ red onion, diced
½ small can of tomato paste
½ cup heavy cream
1 teaspoon red pepper flakes
1 tablespoon butter
¼ cup parmesan cheese
Basil, chopped, to serve
Salt, dried parsley and pepper to taste
Steps:
Start boiling your pasta and DO NOT DRAIN until you save back ¼ cup of pasta water. We’ll need that later!
At the same time, heat up your olive oil and get that garlic/red onion cooking until the red onion has faded in color.
Then add in your tomato paste. Give it a few minutes to get darker in color.
Add in your heavy cream and red pepper flakes.
This is the time where we add in ¼ cup of pasta water along with the finished pasta.
Mix it all together then add in your butter & parmesan cheese.
Add salt, dried parsley and pepper to taste.
Serve with some chopped basil and extra parmesan cheese on top!

Ingredients
2 poblano peppers
3 cups corn (from 4 ears or 1 10 oz package, thawed)
½ red onion, finely chopped
2 tbsp. Fresh lime juice
2 tbsp. Fresh lemon juice
¼ cup chopped cilantro
Kosher saltDirections
Using tongs, char peppers over a gas flame until they're all black and blistered, about 4 minutes per side. (If you don't have a gas flame, you can char them under a broiler, turning them occasionally, until they're blackened and blistered, about 5 minutes per side.)
Place them in a bowl and cover with plastic (or place them in a large Ziploc bag) and let sit for 10 minutes.
Gently peel away the skin of the peppers (resist the urge to run them under cold water), remove the stem and seeds, and finely chop.
Add the peppers to a large bowl along with corn, red onion, cilantro, lemon juice, lime juice, and some salt. Toss everything together and season with more salt and lime juice, if you like.
-
Ingredients
8-10 ears fresh corn
½ cup mayonnaise
1 tablespoon fresh lime juice
¼ teaspoon minced garlic
½ teaspoon kosher salt
¼ cup grated queso fresco
Directions
1. Husk corn. Grill corn ears on a wood-fired grill with apple and hickory wood, turning occasionally, until kernels begin to char in places and corn cooks through. Cool slightly, then slice kernels off the cob to yield 4 cups grilled corn kernels. Let corn rest until ready to serve.
2. While corn cooks, mix mayonnaise, lime juice, garlic, and salt
3. In a skillet on medium high, re-warm corn kernels until very hot, then stir in mayonnaise mixture.
4. Transfer corn to a serving dish and top with queso fresco.

Ingredients
1 package of yeast
½ cup warm water
3 cups all-purpose flour
1 ¼ teaspoon salt
1 teaspoon granulated sugar
1 cup lukewarm waterDirections
Dissolve yeast in 1/2 cup of warm water. Add sugar and stir until dissolved. Let sit for 10-15 minutes until water is frothy.
Combine flour and salt in large bowl. Make a small depression in the middle of flour and pour yeast water in depression. Slowly add 1 cup of warm water, and stir with wooden spoon or rubber spatula until elastic.
Place dough on floured surface and knead for 10-15 minutes. When the dough is no longer sticky and is smooth and elastic, it has been successfully kneaded.
Coat large bowl with vegetable oil and place dough in bowl. Turn dough upside down so all of the dough is coated. Allow to sit in a warm place for about 3 hours, or until it has doubled in size.
Once doubled, roll out in a rope, and pinch off 10-12 small pieces. Place balls on floured surface. Let sit covered for 10 minutes. Preheat oven to 500 degrees F. and make sure rack is at the very bottom of oven. Be sure to also preheat your baking sheet.
Roll out each ball of dough with a rolling pin into circles. Each should be about 5-6 inches across and 1/4 inch thick. Bake each circle for 4 minutes until the bread puffs up. Turnover and bake for 2 minutes.
Remove each pita with a spatula from the baking sheet and add additional pitas for baking.
Take spatula and gently push down puff. Immediately place in storage bags. -
